Homemade fresh pasta is a tradition in Emilia that has been passed down from generation to generation. It’s a childhood memory, a moment of celebration and togetherness with family and friends. Like every Italian dish, each house has its own recipe. A recipe made not only of ingredients but also of consolidated habits and secrets passed down. It’s a recipe deeply rooted in the family’s history, whether for tortelli, anolini, ravioli, gnocchi, tagliatelle, passatelli, maltagliati, strozzapreti, or garganelli…

The tour dedicated to discovering fresh pasta in Emilia can be customized based on your tastes, specific needs, and time available. The experience of preparing fresh pasta is held in an agriturismo located in the hills of Parma. Starting early in the morning, it’s possible to include a visit to the imposing Torrechiara Castle, located in the heart of a vast wine-growing region, continue with a visit to a winery to learn about local wines, and finish the morning with an experience preparing different types of traditional fresh pasta, followed by a lunch where the dishes made with the chef’s help can be tasted.

Timing

9:00 Pick-up of guests in Parma/Meeting with the guide in Parma

9:30-13:00 Cooking lesson
Preparation of traditional fresh pasta and the most typical pasta shapes of Parma, such as tortelli, tagliatelle, cappelletti, maltagliati, garganelli, and gnocchi. After the cooking class, you’ll have lunch at the winery/agriturismo restaurant.

13:00-15:00 Lunch
During lunch, you can taste the dishes prepared with the chef’s help. The meal includes a traditional mixed salumi appetizer, a traditional pasta dish, a typical second course, and a traditional dessert such as sbrisolona or zuppa inglese, 2 glasses of DOC wine from the Colli di Parma, water, and coffee.

15:30 Drop-off of guests in Parma

The tour dedicated to discovering Emilia’s fresh pasta can be personalized based on your tastes, specific needs, and available time. The cooking lesson can be held in the afternoon and followed by dinner.

Starting early in the morning, it’s possible to include a visit to the imposing Torrechiara Castle, nestled in the center of a vast wine area, continue with a visit to a winery to learn about local wines, and finish with a pasta cooking lesson, making various types of traditional fresh pasta.

On request, a visit to a Parmigiano Reggiano cheese factory, a Prosciutto di Parma facility, or a Traditional Balsamic Vinegar producer can be included. For the more curious, we recommend including a visit to the Pasta Museum and the Tomato Museum, located in the beautiful medieval agricultural courtyard of Giarola, on the right bank of the Taro River.
